Mini Chicken Burgers


These tasty little burgers are a perfect light meal, after-school snack or party food.

The ingredient of Mini Chicken Burgers

  • 1 half baguette ends trimmed
  • 340g lean chicken mince
  • 2 tsp mild curry powder
  • 2 spring onions trimmed finely chopped
  • 1 tbsp chopped fresh continental parsley
  • olive oil spray
  • 2 light cheddar slices each cut into 4 triangles
  • 4 small baby cos lettuce leaves
  • 4 pineapple thins in juice drained
  • 65g 1 4 cup whole egg mayonnaise
  • 4 cherry tomatoes

The Instruction of mini chicken burgers

  • cut the baguette into 8 slices diagonally place on a baking tray
  • place the chicken mince curry powder spring onions and parsley in a medium bowl season with salt and pepper use your hands to mix until well combined divide into 4 even portions use wet hands to shape each portion into a patty
  • heat a non stick frying pan over medium heat spray with oil cook the patties for 2 3 minutes each side or until golden and cooked through arrange 2 cheddar triangles overlapping on top of each patty
  • preheat grill on high toast bread under grill until light golden top 1 slice of toast with lettuce pineapple and a chicken patty cheddar side up top with mayonnaise and another slice of toast thread 1 tomato onto a bamboo skewer and push into the burger to secure repeat with remaining toast patties mayonnaise and tomatoes
