The ingredient of Spaghetti With Bacon And Herb Crumbs

  • 350g spaghetti
  • 2 slices molenberg swiss bake soy linseed bread
  • 1 tbsp olive oil
  • 3 middle bacon rashers trimmed finely chopped
  • 2 garlic cloves crushed
  • 1 long red chilli finely chopped
  • 2 shallots trimmed finely chopped
  • 1 2 cup chopped fresh parsley
  • sea salt freshly ground pepper
  • 30g butter
  • 1 2 cup 40g finely grated parmesan

  • cook pasta in salted boiling water until just tender drain reserving 1 3 cup of cooking liquid
  • process bread until finely chopped heat oil in a large non stick pan over medium heat cook bacon until golden add breadcrumbs and cook until crisp be careful as the grain can pop stir through garlic chilli shallots and parsely and season to taste
  • toss pasta with butter parmesan half of the crumb mixture and enough cooking liquid to moisten divide between plates and top with remaining crumbs serve immediately
