  • 250g punnet strawberries halved or quartered
  • 125g punnet blueberries
  • 2 pears thinly sliced
  • 1 2 cup 40g shredded coconut
  • 1 2 cup 45g rolled oats
  • 1 4 cup 50g raw cashews
  • 1 4 cup 40g natural almonds
  • 1 tbsp agave syrup
  • 1 4 tsp ground cinnamon
  • 1 cup 150g raw cashews
  • 1 4 cup 60ml agave syrup plus extra to serve
  • 1 4 tsp vanilla bean paste
  • 1 4 cup 60ml water

  • to make the cashew cream place all ingredients in a blender or use a sticker mixer and blend on high for 4 minutes or until smooth refrigerate and set aside
  • to make the crumble place the almonds and cashews in a small food processor and process until finely chopped place in a bowl and add the remaining ingredients and mix to combine
  • to serve divide the fruit between 4 bowls spoon over the cashew cream and crumble mixture drizzle with extra agave syrup
