For a healthy weeknight meal, you can rely on this speedy vegetable-packed pasta.

The ingredient of Faster Pasta

  • 375g dried pappardelle pasta
  • 4 vine ripened tomatoes finely chopped
  • 200g bought chargrilled yellow capsicums drained finely chopped
  • 2 green shallots ends trimmed thinly sliced
  • 100g persian feta crumbled
  • 50g baby rocket leaves
  • 85g 1 2 cup pimento stuffed green olives thinly sliced
  • 2 tbsp drained capers
  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • salt freshly ground black pepper

The Instruction of faster pasta

  • cook the pasta in a large saucepan of salted boiling water following packet directions or until al dente drain well
  • meanwhile combine tomato capsicum shallot feta rocket olives capers oil and vinegar in a bowl taste and season with salt and pepper add pasta to the tomato mixture and toss to combine serve
