For a healthy weeknight meal, you can rely on this speedy vegetable-packed pasta.
The ingredient of Faster Pasta
- 375g dried pappardelle pasta
- 4 vine ripened tomatoes finely chopped
- 200g bought chargrilled yellow capsicums drained finely chopped
- 2 green shallots ends trimmed thinly sliced
- 100g persian feta crumbled
- 50g baby rocket leaves
- 85g 1 2 cup pimento stuffed green olives thinly sliced
- 2 tbsp drained capers
- 1 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- salt freshly ground black pepper
The Instruction of faster pasta
- cook the pasta in a large saucepan of salted boiling water following packet directions or until al dente drain well
- meanwhile combine tomato capsicum shallot feta rocket olives capers oil and vinegar in a bowl taste and season with salt and pepper add pasta to the tomato mixture and toss to combine serve
