Grapefruit Crumble Cake


This grapefruit crumble cake is made delicious with spiced caramel grapefruit.

The ingredient of Grapefruit Crumble Cake

  • 200 g butter at room temperature chopped
  • 3 4 cup coles brand caster sugar
  • 1 tsp vanilla extract
  • finely grated zest of 1 ruby grapefruit
  • 3 eggs
  • 21 2 cups white wings self raising flour sifted
  • 1 2 cup white wings plain flour sifted
  • 1 4 cup coles brand brown sugar
  • 50 g butter extra chilled finely chopped
  • 1 cup vanilla yoghurt to serve
  • 1 2 cup caster sugar
  • 1 2 cup water
  • 1 2 cup ruby grapefruit juice
  • 1 2 cinnamon stick
  • 3 cardamom pods
  • 1 ruby grapefruit segmented

The Instruction of grapefruit crumble cake

  • preheat oven to 180c or 160c fan forced grease a 21cm base measurement springform tin and line the base with baking paper use an electric mixer to beat the butter and caster sugar in a bowl until light and creamy beat in the vanilla and grapefruit zest add the eggs 1 at a time beating well after each addition
  • fold in half the self raising flour then the grapefruit juice then remaining self raising flour spoon into the prepared tin and smooth the surface combine the plain flour and brown sugar in a bowl rub in the extra butter until the mixture resembles breadcrumbs sprinkle over the cake bake for 50 mins or until the centre feels firm when lightly touched cool in the tin for 5 mins then release the side and slide the cake off the paper onto a wire rack to cool completely
  • meanwhile to make the spiced caramel grapefruit stir the sugar and water in a small saucepan over low heat until the sugar dissolves increase heat to medium and bring to the boil simmer without stirring for 10 mins or until deep golden remove from heat and carefully add the juice it will spatter add cinnamon stick and cardamom pods and stir over low heat to dissolve any lumps of toffee bring to a simmer and cook for 8 mins or until slightly syrupy cool to room temperature then strain into a jug discarding spices and pulp add the grapefruit segments to the caramel
  • serve the cake with the spiced caramel grapefruit and drizzle with yoghurt
