Coconut Lemon Delicious


The perfect combination of lemon and coconut comes together in this sweet treat that is ready in under an hour.

The ingredient of Coconut Lemon Delicious

  • 30g butter at room temperature
  • 3 eggs separated
  • 60ml 1 4 cup honey
  • 1 tsp vanilla bean paste
  • 3 tsp finely grated lemon rind
  • 1 tbsp desiccated coconut plus extra to serve
  • 2 tbsp gluten free cornflour or tapioca flour
  • 1 4 tsp baking powder
  • 250ml 1 cup milk
  • 125ml 1 2 cup fresh lemon juice

The Instruction of coconut lemon delicious

  • preheat oven to 180c 160c fan forced grease a 1 5l 6 cup ceramic baking dish place in a larger deeper baking dish
  • use electric beaters to beat the butter egg yolks 2 tbs honey vanilla and lemon rind in a bowl until pale and creamy beat in the coconut cornflour or tapioca flour and baking powder slowly beat in the milk and lemon juice mixture will look curdled
  • use clean beaters to beat egg whites and remaining honey in a separate bowl until soft peaks form use a large metal spoon to fold in 3 batches egg white mixture into butter mixture until just combined pour into prepared dish
  • pour boiling water into the larger dish until it reaches halfway up the side of the smaller dish bake for 35 40 minutes or until puffed and golden if the top is browning too quickly cover with foil halfway through sprinkle with extra coconut and serve immediately
