The ingredient of Lemon And Herb Lamb Cutlets

  • 8 10 lamb cutlets
  • 1 tbsp chopped chives
  • 1 3 cup chopped mint
  • 1 tbsp lemon juice
  • 1 3 cup chopped flat leaf parsley
  • 1 tsp finely grated lemon rind
  • 1 4 cup 60ml olive oil

  • trim cutlets of excess fat place oil lemon juice lemon rind parsley mint chives and salt and pepper in a bowl mix well add cutlets and toss to coat cover and refrigerate for 10 minutes
  • heat a non stick frying pan or grill plate over medium heat add cutlets and cook for 3 minutes on each side or until cooked to your liking serve cutlets with green salad and corn on the cobb
