  • 300g silken tofu drained
  • zest and juice of 1 lemon
  • 8 baby gherkins cornichons finely chopped
  • 1 tbsp fresh dill finely chopped
  • 1 tbsp fresh chives finely chopped
  • 1 garlic clove crushed
  • pita bread to serve
