Peppered Beef Stew With Vintage Cheddar Scrolls Recipe


This hearty beef stew is served with cheesy bread scrolls to soak up every last morsel. Its the perfect winter warmer.

  • 2 tbsp extra virgin olive oil
  • 1 2kg beef chuck steak trimmed cut into 3cm pieces
  • 12 eschalots peeled halved if large
  • 3 garlic cloves crushed
  • 4 rindless bacon rashers roughly chopped
  • 2 tsp cracked black pepper
  • 1 tbsp plain flour
  • 2 tbsp tomato paste
  • 2 cups salt reduced beef stock
  • steamed green beans to serve
  • 2 cups self raising flour
  • 1 tsp sea salt
  • 50g chilled butter grated
  • 3 4 cup buttermilk
  • 100g vintage cheddar grated
  • 1 2 cup finely grated parmesan
  • 1 tbsp fresh thyme leaves

  • heat oil in a large heavy based saucepan over medium high heat cook beef in batches stirring for 5 minutes or until browned transfer to a bowl
  • add eschalots to pan cook stirring for 5 minutes or until lightly browned add garlic bacon and pepper cook stirring for 2 to 3 minutes or until fragrant and bacon starts to brown add flour and paste cook stirring for 1 minute
  • stir in stock bring to the boil reduce heat to low simmer covered for 2 hours or until beef is tender uncover simmer for 30 minutes or until beef is very tender and sauce has thickened
  • meanwhile make vintage cheddar scrolls preheat oven to 200c 180c fan forced line 1 large baking tray with baking paper sift flour and salt into a large bowl using finger tips rub butter into flour mixture until mixture resembles fine crumbs make a well add buttermilk using a butter knife stir until a soft dough forms
  • turn out onto a lightly floured surface knead until smooth using a lightly floured rolling pin roll out into a 25cm x 30cm rectangle sprinkle with cheeses and thyme roll up dough from 1 long end to enclose filling trim and discard ends cut roll into 12 slices place scrolls 2cm apart on prepared tray bake for 20 minutes or until golden and cooked through see note serve beef with warm scrolls and steamed green beans
