Volcano Cob Loaf Recipe


For the ultimate party crowd-pleaser, you cant beat this insanely cheesy cob loaf dip. With an eruption of cream cheese, cheddar, sour cream and sweet chilli sauce, its impossible to stop eating!

The ingredient of Volcano Cob Loaf Recipe

  • 1 large cob loaf
  • 60g butter
  • 4 rashers shortcut bacon finely chopped
  • 4 green shallots thinly sliced plus extra to serve
  • 40g 1 4 cup plain flour
  • 500ml 2 cups milk
  • 250g cream cheese chopped
  • 80g 1 cup grated cheddar cheese
  • 125g 1 2 cup sour cream
  • 2 tbsp sweet chilli sauce

The Instruction of volcano cob loaf recipe

  • preheat oven to 180c 160c fan forced use a serrated knife to slice the top from the cob loaf use your fingers to tear the bread from the inside leaving a 2cm thick shell cut the inside filling into approximately 3cm pieces and cut the lid into 12 wedges
  • place the cob on an oven tray place the wedges cut side up and bread pieces onto a separate oven tray spray the cob wedges and bread with oil bake for 10 minutes or until just crisp set aside
  • meanwhile heat 20g of the butter in a large saucepan over medium heat until foamy add the bacon and cook stirring occasionally for 5 minutes or until lightly golden use a slotted spoon to transfer the bacon to a plate set aside
  • add the remaining butter to the pan and heat until foamy add the shallot and cook stirring for 2 minutes or until soft add the flour and cook stirring for 1 minute or until mixture bubbles remove the pan from the heat gradually add the milk stirring constantly until smooth return the pan to the heat and cook stirring constantly for 2 minutes or until the sauce thickens stir in the cream cheese and half the tasty cheese until melted stir in most of the bacon reserving about 2 tablespoons
  • spoon the cheese mixture into the cob loaf stand the bread wedges upright in the mixture leaning against one another sprinkle with the remaining cheese bake for 10 minutes or until the cheese has melted
  • top the cob with the sour cream drizzle with the sweet chilli sauce and sprinkle with the remaining bacon serve warm with the bread croutons for dipping
