Spicy Sausage And Vegetable Casserole


Spicy sausages are baked with herbs and vegetables to produce a great tasting casserole.

The ingredient of Spicy Sausage And Vegetable Casserole

  • 2 tbsp olive oil
  • 500g chorizo sausages chopped into 3cm pieces
  • 150g rindless bacon roughly chopped
  • 2 cloves garlic chopped
  • 1 tsp paprika
  • 400g can diced tomatoes
  • 2 cups chicken stock
  • 3 cups frozen mixed vegetables
  • 1 2 cup parsley chopped
  • 1 onion halved thinly sliced

The Instruction of spicy sausage and vegetable casserole

  • heat oil in a large heavy based saucepan on high cook sausage pieces for 1 2 mins each side until brown drain on kitchen paper
  • cook bacon and onion in same pan for 5 mins on medium heat until onion is soft add garlic and paprika and cook for 1 min add tomato and stock and bring to the boil return sausages to pan and simmer on low for 10 mins
  • add vegetables and simmer uncovered for 10 mins stir through parsley serve with steamed rice
