Spicy sausages are baked with herbs and vegetables to produce a great tasting casserole.
The ingredient of Spicy Sausage And Vegetable Casserole
- 2 tbsp olive oil
- 500g chorizo sausages chopped into 3cm pieces
- 150g rindless bacon roughly chopped
- 2 cloves garlic chopped
- 1 tsp paprika
- 400g can diced tomatoes
- 2 cups chicken stock
- 3 cups frozen mixed vegetables
- 1 2 cup parsley chopped
- 1 onion halved thinly sliced
The Instruction of spicy sausage and vegetable casserole
- heat oil in a large heavy based saucepan on high cook sausage pieces for 1 2 mins each side until brown drain on kitchen paper
- cook bacon and onion in same pan for 5 mins on medium heat until onion is soft add garlic and paprika and cook for 1 min add tomato and stock and bring to the boil return sausages to pan and simmer on low for 10 mins
- add vegetables and simmer uncovered for 10 mins stir through parsley serve with steamed rice
