Try something different with this Tunisian eggplant side dish.
The ingredient of Zaalouk
- 1 large 700g eggplant cut into 1 5cm thick slices
- 100ml olive oil
- 2 cloves garlic finely chopped
- 1 tsp ground cumin
- 1 tsp sweet paprika
- 1 4 tsp harissa
- 2 roma tomatoes peeled seeded finely chopped
- juice of 1 2 lemon
The Instruction of zaalouk
- preheat grill to medium brush eggplant with 2 tablespoons oil and grill for 16 minutes turning halfway until soft and golden cool slightly then chop roughly
- stir remaining oil garlic spices and harissa in a frying pan over medium heat for 2 minutes or until fragrant add eggplant and tomatoes and cook for 10 minutes or until thick and well combined stir in lemon juice season
