Spinach Celeriac Salad With Walnuts


This delicious vegan side salad is a crunchy addition to the dinner table.

The ingredient of Spinach Celeriac Salad With Walnuts

  • 100g pkt walnuts
  • 60ml 1 4 cup white wine vinegar
  • 1 tbsp olive oil
  • 1 1 2 tbsp brown sugar
  • 2 tbsp fresh lemon juice
  • 1 celeriac trimmed peeled
  • 1 bunch radish trimmed thinly sliced
  • 140g pkt spinach rocket kale salad mix

The Instruction of spinach celeriac salad with walnuts

  • heat a frying pan over medium heat cook the walnuts for 2 3 minutes or until lightly toasted set aside to cool
  • whisk the vinegar oil and sugar in a jug until well combined season with salt and pepper
  • fill a large bowl with iced water add the lemon juice thinly slice the celeriac and place in the water place the radish in a large serving bowl
  • drain the celeriac add the walnuts celeriac and salad mix to the radish add the dressing to the salad and toss to combine
