Seafood Soup With Aioli And Parmesan Toasts


Make the base for this aromatic soup ahead of time before adding oodles of fresh seafood.

  • 60ml 1 4 cup extra virgin olive oil
  • 2 brown onions thinly sliced
  • 1 baby fennel trimmed thinly sliced
  • 4 garlic cloves thinly sliced
  • 4 about 580g roma tomatoes coarsely chopped
  • 1 large pinch saffron threads
  • 250ml 1 cup white wine
  • 1 5l 6 cups fish stock
  • 400g boneless skinless salmon fillets cut into 3cm pieces
  • 400g firm white fish fillets cut into 3cm pieces
  • 12 green prawns peeled tails intact
  • 12 scallops
  • 12 black mussels cleaned beards removed
  • 2 small squid tubes thinly sliced
  • 1 small baguette thinly sliced diagonally
  • 50g parmesan finely grated
  • 1 3 cup fresh continental parsley chopped plus extra baby leaves to serve

  • heat oil in a large heavy based saucepan over medium low heat add onion and cook stirring for 2 minutes or until just soft add fennel cook stirring for 8 10 minutes until soft add garlic tomato and saffron cook stirring often for 10 minutes or until vegetables are tender
  • add the wine to the pan and simmer for 4u00a0minutes or until reduced by half add the stock and bring to a gentle simmer simmer covered for 20 minutes to fully develop the flavours
  • add seafood to the soup simmer covered for 5 10 minutes or until just cooked through discard any unopened mussels
  • meanwhile preheat oven to 200c 180c fan forced line a baking tray with baking paper place baguette slices in a single layer on the prepared tray bake for 10 minutes or until pale golden sprinkle with the parmesan bake for a further 5 8 minutes or until melted and crisp
  • stir the chopped parsley into the soup and divide among serving bowls top with a dollop of aioli sprinkle with the baby parsley and season with pepper serve with parmesan toasts on the side
