Creamy Baked Cheese Gnocchi


Sick of the same old? Mix it up at dinner time with this indulgent baked blue cheese gnocchi.

The ingredient of Creamy Baked Cheese Gnocchi

  • 300g castello creamy blue cheese
  • 2 french shallots peeled quartered
  • 4 garlic cloves
  • 200g swiss brown mushrooms coarsely chopped
  • 5 6 fresh thyme sprigs plus extra to serve
  • 1 tbsp olive oil
  • 35g u00bc cup roughly chopped walnuts

The Instruction of creamy baked cheese gnocchi

  • preheat the oven to 180c 160c fan forced
  • place the blue cheese in a baking dish scatter shallot garlic mushroom and thyme around the cheese drizzle olive oil over mushrooms and season with salt bake for 25 30 minutes adding walnuts after 20 minutes cooking
  • cook the gnocchi according to packet directions drain reserving 60ml u00bc cup cooking liquid
  • add the mascarpone and reserved liquid to the baking dish stir until smooth add the gnocchi and stir to combine
  • top with extra thyme and blue cheese if using to serve
