The ingredient of Vegan Satay Noodle Stir Fry Recipe
- 100g dried edamame bean fettuccine pasta
- 1 tsp sesame oil
- 350g broccoli cut into florets
- 2 large carrots peeled cut into matchsticks
- 1 red capsicum deseeded thinly sliced
- 4 green shallots thinly sliced plus extra thinly sliced to serve
- 2 garlic cloves crushed
- 100g podded frozen edamame
- 200g satay marinated tofu cut into long strips
- 2 tbsp salt reduced soy sauce

- place the pasta in a large heatproof bowl cover with boiling water set aside for 5 minutes or until softened drain
- heat the oil in a large wok over high heat stir fry the broccoli carrot capsicum shallot and garlic for 2 minutes or until almost tender add edamame and tofu stir fry for 1 minute add the pasta and soy sauce stir fry for 1 2 minutes or until hot serve topped with extra shallot
