  • 100g dried edamame bean fettuccine pasta
  • 1 tsp sesame oil
  • 350g broccoli cut into florets
  • 2 large carrots peeled cut into matchsticks
  • 1 red capsicum deseeded thinly sliced
  • 4 green shallots thinly sliced plus extra thinly sliced to serve
  • 2 garlic cloves crushed
  • 100g podded frozen edamame
  • 200g satay marinated tofu cut into long strips
  • 2 tbsp salt reduced soy sauce

  • place the pasta in a large heatproof bowl cover with boiling water set aside for 5 minutes or until softened drain
  • heat the oil in a large wok over high heat stir fry the broccoli carrot capsicum shallot and garlic for 2 minutes or until almost tender add edamame and tofu stir fry for 1 minute add the pasta and soy sauce stir fry for 1 2 minutes or until hot serve topped with extra shallot
