Topped with pancetta, with the addition of smoked cheddar, this shepherds pie is the definition of delicious and indulgent.
The ingredient of Pancetta Topped Shepherds Pie
- 1 tbsp olive oil
- 500g lamb mince
- 1 brown onion finely chopped
- 1 large carrot peeled finely chopped
- 2 garlic cloves finely chopped
- 125ml 1 2 cup red wine
- 1 tbsp plain flour
- 1 tbsp tomato paste
- 300ml massel chicken style liquid stock
- 1kg potatoes peeled coarsely chopped
- 75g butter chopped
- 50g pouring cream warmed
- 60g smoked cheddar coarsely grated
- 50g mozzarella coarsely grated
- 5 slices pancetta pan fried
The Instruction of pancetta topped shepherds pie
- heat 2 teaspoon oil in a large frying pan over medium heat add mince and cook stirring with a wooden spoon to break up any lumps for 5 7 minutes until browned transfer to a bowl and set aside
- heat the remaining 2 teaspoon oil in the pan add the onion carrot and garlic and cook stirring for 7 10 minutes until softened deglaze the pan with red wine stir for 1 2 minutes or until reduced return mince to the pan add the flour and cook stirring for 2u00a0minutes stir in the tomato paste and stock bring to the boil reduce the heat to low and simmer for 25u00a0minutes or until the sauce thickens season
- meanwhile preheat the oven to 200c 180c fan forced cook potato in a large saucepan of salted boiling water for 15 20 minutes until tender drain mash until smooth use a wooden spoon to beat in butter and cream until combined season
- spoon mince into a 2l 8 cup ovenproof baking dish top with mash scatter with cheddar and mozzarella bake for 20 25 minutes or until golden and bubbling top with pancetta and serve immediately
