The ingredient of Tomato Vegetable Soup
- 2 tsp olive oil
- 1 onion chopped
- 4 cups 1 litre massel vegetable liquid stock
- 800g can chopped tomatoes
- 2 medium carrots peeled and chopped
- 2 medium zucchini chopped
- 2 potatoes peeled and chopped
- 1 2 cup 50g dried pasta spirals
- 1 4 cup fresh parsley chopped
The Instruction of tomato vegetable soup
- in a large saucepan heat oil over a medium heat add onion to pan and cook for 2 3 minutes until softened
- pour stock and tomatoes into pan bring to a simmer add carrots zucchini and potatoes cover cook for 20 minutes stirring occasionally
- remove lid stir pasta into soup and cook for a further 15 minutes until pasta is cooked
- sprinkle soup with fresh parsley to serve serve with crusty bread or toast
