Tomato Vegetable Soup


The ingredient of Tomato Vegetable Soup

  • 2 tsp olive oil
  • 1 onion chopped
  • 4 cups 1 litre massel vegetable liquid stock
  • 800g can chopped tomatoes
  • 2 medium carrots peeled and chopped
  • 2 medium zucchini chopped
  • 2 potatoes peeled and chopped
  • 1 2 cup 50g dried pasta spirals
  • 1 4 cup fresh parsley chopped

The Instruction of tomato vegetable soup

  • in a large saucepan heat oil over a medium heat add onion to pan and cook for 2 3 minutes until softened
  • pour stock and tomatoes into pan bring to a simmer add carrots zucchini and potatoes cover cook for 20 minutes stirring occasionally
  • remove lid stir pasta into soup and cook for a further 15 minutes until pasta is cooked
  • sprinkle soup with fresh parsley to serve serve with crusty bread or toast
