Pear, Almond Chocolate Torte


You cant go past Dani Venns delicious combination of pear and chocolate, sweet and spongy. Mmmmm

The ingredient of Pear Almond Chocolate Torte

  • 150g salted butter
  • 1 vanilla bean seeds scraped
  • 5 egg whites
  • pinch salt
  • 2 1 2 cups 350g pure icing sugar sifted extra for dusting
  • 1 cup 120g plain flour
  • 100g almond meal
  • 50g flaked almonds
  • 100g dark chocolate roughly chopped plus extra grated for serving
  • 2 pears peeled and sliced 5cm thick

The Instruction of pear almond chocolate torte

  • preheat oven to 170c 150c fan grease a 24cm x 5cm fluted tart pan with a loose base
  • place the vanilla beans in to a small saucepan with the butter melt butter and cook gently over medium heat for 4 5 minutes until the mixture turns dark and nutty
  • strain the butter into a bowl discard the solids and cool to room temperature
  • whisk egg whites with pinch of salt until soft peaks form add half icing sugar and combine then fold in the remaining sugar flour and ground almonds
  • stir through the burnt vanilla butter pour mixture into the pan and place sliced pears and chocolate chunks on top scatter with almond flakes
  • bake for 1 hour or until the tart is puffed and just set remove from oven and cool to room temperature
  • dust with icing sugar and garnish with grated dark chocolate
