The ingredient of Warm Apple Pancetta Walnut Salad

  • 8 slices 100g pancetta or prosciutto
  • 2 golden delicious or granny smith apples cored peeled and sliced
  • 200g packet gourmet salad
  • 1 4 cup 60ml extra virgin olive oil
  • 1 4 cup 60ml apple cider vinegar
  • 1 tsp sugar
  • 2 tbsp shaved parmesan cheese

  • toast the walnuts in a frying pan over a medium heat tossing until fragrant remove and set aside
  • add the pancetta and cook until crisp remove and set aside tear into rough pieces add the apples cook on both sides until golden
  • combine the walnuts torn pancetta apples and salad leaves in a large bowl whisk the extra virgin olive oil apple cider vinegar and sugar in a small bowl pour the dressing over the salad to serve scatter with the parmesan
