Tim Tam Surprise Cake Recipe


The best kind of surprise is a Tim Tams surprise! You can use different Tim Tam flavours each time you make this super simple surprise cake try salted caramel or red velvet for an extra indulgent twist.

The ingredient of Tim Tam Surprise Cake Recipe

  • 2 eggs
  • 255g 11 4 cups firmly packed light brown sugar
  • 1 tsp vanilla paste
  • 125ml 1 2 cup vegetable oil
  • 250ml 1 cup buttermilk
  • 225g 11 2 cups self raising flour
  • 50g 1 2 cup cocoa powder
  • 2 x 200g pkt original tim tams
  • double thick cream to serve
  • 180g milk chocolate finely chopped
  • 125ml 1 2 cup thickened cream
  • 20g butter

The Instruction of tim tam surprise cake recipe

  • preheat oven to 180c 160c fan forced grease a 20cm square cake tin line with baking paper
  • for the ganache place the chocolate in a bowl heat the cream and butter in a small saucepan over medium low heat until just simmering pour over chocolate set aside for 5 minutes to cool slightly use electric beaters to beat the cream mixture until well combined cover place in the fridge to chill for 2 hours
  • use electric beaters to beat the eggs sugar vanilla and oil until pale and creamy add the buttermilk sift flour and cocoa powder over the egg mixture and beat until combined
  • pour half the mixture into the prepared tin and arrange tim tams in a layer on top you may need to cut a few in half lengthways to fit pour over remaining mixture bake for 35 40 minutes or until an inserted skewer comes out clean set aside in pan for 5 minutes to cool slightly before transferring to a wire rack to cool completely
  • use electric beaters to beat the ganache for 60 seconds or until pale and creamy do not overmix spread over cooled cake
