  • 250g dried brown lentils or green lentils
  • 1 4 cup olive oil
  • 1 small red onion finely chopped
  • 1 large carrot peeled finely chopped
  • 1 4 cup flat leaf parsley
  • 1 orange rind finely grated juiced

  • wash and drain lentils place into a saucepan with 4 cups of cold water bring to the boil over high heat reduce heat to medium low cover and simmer for 30 minutes or until tender drain rinse under cold water transfer to a bowl
  • heat 1 tablespoon of oil in a large non stick frying pan add onion and carrot cook stirring occasionally for 3 minutes or until just tender stir into lentils with parsley and orange rind
  • combine orange juice remaining 2 tablespoons of oil and salt and pepper in a jug whisk with a fork to combine pour dressing over lentil salad toss gently to combine serve
