The ingredient of Mini Ombr Cheesecakes Recipe

  • 100g digestive biscuits
  • 50g butter melted
  • 125g strawberries chopped
  • 2 3 cup 150g caster sugar
  • 125g fresh or frozen raspberries
  • 125g fresh or frozen blackberries
  • 500g cream cheese softened
  • 3 4 cup 185ml thickened cream
  • 200g white chocolate melted
  • 1 4 cup 60ml boiling water
  • 3 tsp gelatine powder
  • mixed berries to serve
  • chopped pistachios to serve

The Instruction of mini ombr cheesecakes recipe

  • grease a 12 hole u00bd cup 125ml muffin pan line the base and side of each hole with baking paper
  • process biscuits in a food processor until finely crushed add butter and process until well combined spoon evenly among prepared pans use the back of the spoon to smooth the surface place in the fridge for 30 mins to chill
  • meanwhile place the strawberry 1 tbs sugar and 1 tbs water in a small saucepan over medium heat cook stirring for 5 mins or until strawberry releases its juice transfer to a blender and blend until smooth strain through a fine sieve into a bowl repeat in 2 more batches with raspberries blackberries 2 tbs of remaining sugar and 2 tbs water
  • process the cream cheese and cream in a clean food processor until smooth add the white chocolate and remaining sugar and process until smooth and well combined
  • place the boiling water in a small heatproof jug sprinkle over gelatine stir until gelatine dissolves add to the cream cheese mixture in food processor process until well combined divide the mixture evenly into 3 portions add strawberry puree to 1 portion and stir to combine stir raspberry puree into another portion stir blackberry puree into remaining portion transfer the blackberry mixture to a jug pour evenly among biscuit bases in the pan place in the freezer for 15 mins or until just set repeat with raspberry mixture place in the freezer for 10 mins or until just set repeat with strawberry mixture place in the freezer for 2 hours or until firm
  • remove from freezer set aside in pan for 5 mins transfer to a serving platter set aside for 10 mins to soften slightly top with berries and pistachio
