Pasta With Green Vegetables


Heres a delicious pasta dish to make sure you are getting enough greens.

The ingredient of Pasta With Green Vegetables

  • 2 tsp olive oil
  • 3 anchovies rinsed drained chopped
  • 2 tbsp capers rinsed drained
  • 2 bunches asparagus trimmed
  • 2 zucchini trimmed thinly sliced
  • 300g linguine or spaghetti
  • 1 cup frozen peas
  • 2 lemons rind finely grated juiced
  • 1 tsp dijon mustard
  • 1 2 tsp caster sugar

The Instruction of pasta with green vegetables

  • make lemon dressing whisk all ingredients in a small bowl until combined
  • heat oil in a large non stick frying pan over medium heat add anchovies and cook stirring for 1 minute or until dissolved add capers asparagus and zucchini and stir to coat in oil mixture add 1 tablespoon water cover and cook for 2 minutes or until vegetables are tender
  • meanwhile cook pasta until tender following packet directions adding peas for last 2 minutes drain return to pan
  • add vegetables and dressing to pasta toss over low heat until combined season with salt and pepper serve with bread
