Heres a delicious pasta dish to make sure you are getting enough greens.
The ingredient of Pasta With Green Vegetables
- 2 tsp olive oil
- 3 anchovies rinsed drained chopped
- 2 tbsp capers rinsed drained
- 2 bunches asparagus trimmed
- 2 zucchini trimmed thinly sliced
- 300g linguine or spaghetti
- 1 cup frozen peas
- 2 lemons rind finely grated juiced
- 1 tsp dijon mustard
- 1 2 tsp caster sugar
The Instruction of pasta with green vegetables
- make lemon dressing whisk all ingredients in a small bowl until combined
- heat oil in a large non stick frying pan over medium heat add anchovies and cook stirring for 1 minute or until dissolved add capers asparagus and zucchini and stir to coat in oil mixture add 1 tablespoon water cover and cook for 2 minutes or until vegetables are tender
- meanwhile cook pasta until tender following packet directions adding peas for last 2 minutes drain return to pan
- add vegetables and dressing to pasta toss over low heat until combined season with salt and pepper serve with bread
