Easy Vietnamese Style Caramel Pork Meatballs

  • 1 4 cup rice wine vinegar
  • 2 tsp caster sugar
  • 1 2 tsp salt
  • 1 carrot julienned
  • 500g pork mince
  • 1 stalk lemongrass white part only finely chopped
  • 2 garlic cloves crushed
  • 3cm piece fresh ginger peeled finely grated
  • 1 4 cup finely chopped fresh coriander leaves
  • 1 3 cup dried breadcrumbs
  • 1 egg lightly beaten
  • 1 tbsp peanut oil
  • 1 tbsp lime juice
  • 1 long red chilli thinly sliced
  • 1 lebanese cucumber cut into long strips
  • 1 baby gem lettuce leaves separated
  • steamed jasmine rice to serve
  • 1 tbsp honey
  • 2 tbsp caster sugar
  • 1 tbsp fish sauce
  • 2 tbsp light soy sauce

  • place vinegar sugar and salt in a large bowl stir until sugar dissolves add carrot toss to coat set aside for 20 minutes
  • meanwhile combine pork mince lemongrass garlic ginger coriander breadcrumbs and egg in a bowl roll tablespoons of pork mixture into balls
  • make caramel sauce combine honey sugar fish sauce soy sauce and 1 4 cup water in a jug
  • heat oil in a large frying pan over medium high heat add meatballs cook turning for 5 minutes or until browned all over add honey mixture cook turning meatballs occasionally for 5 minutes or until meatballs are cooked through and sauce thickens slightly stir in lime juice sprinkle with chllli
  • add cucumber and lettuce to carrot mixture toss to combine serve meatballs with rice and salad
