The ingredient of Caramel Pineapple Slabs Recipe
- 70g 1 3 cup brown sugar
- 50g butter
- 60ml 1 4 cup fresh lime juice
- 8 x 1cm thick slices fresh pineapple flesh
- gluten free vanilla ice cream to serve
- 1 1 2 tbsp shredded coconut
- finely grated lime rind to sprinkle

- place the sugar butter and lime juice in a large frying pan and stir over low heat until combined simmer stirring occasionally for 3 minutes or until slightly reduced
- increase heat to medium high and add half the pineapple slices cook for 3 minutes each side transfer to serving plates and repeat with the remaining pineapple
- top the pineapple with ice cream drizzle over the sauce from the pan and sprinkle with coconut and lime zest serve immediately
