This fruity slice makes a quick and easy summertime dessert.

  • 70g 1 3 cup brown sugar
  • 50g butter
  • 60ml 1 4 cup fresh lime juice
  • 8 x 1cm thick slices fresh pineapple flesh
  • gluten free vanilla ice cream to serve
  • 1 1 2 tbsp shredded coconut
  • finely grated lime rind to sprinkle

  • place the sugar butter and lime juice in a large frying pan and stir over low heat until combined simmer stirring occasionally for 3 minutes or until slightly reduced
  • increase heat to medium high and add half the pineapple slices cook for 3 minutes each side transfer to serving plates and repeat with the remaining pineapple
  • top the pineapple with ice cream drizzle over the sauce from the pan and sprinkle with coconut and lime zest serve immediately
