Why have just burritos when you can have a burrito in a lasagne? This lasagne uses ingredients youll already have at home but doesnt lack on flavour.
The ingredient of Mexican Burrito Lasagne Recipe
- 1 tbsp olive oil
- 1 brown onion coarsely chopped
- 1 red capsicum deseeded coarsely chopped
- 2 garlic cloves crushed
- 1 tsp mexican chilli powder
- 1 tsp ground cumin
- 1 tsp dried oregano
- 300g sweet potato peeled coarsely grated
- 400g can diced tomatoes
- 400g can black beans rinsed drained
- 300g can corn kernels drained
- 6 mini flour tortillas
- 155g 1 1 2 cups pre grated mexican cheese blend
- 2 green shallots thinly sliced
- 2 tbsp fresh coriander chopped

- preheat oven to 200u00b0c 180u00b0c fan forced grease a 6cm deep 18 x 28cm baking dish
- heat the oil in a large deep frying pan over medium heat add the onion and capsicum cook stirring occasionally for 5 minutes or until softened add the garlic mexican chilli powder cumin and oregano and cook stirring for 30 seconds until aromatic add the sweet potato and cook stirring for 3 minutes until softened stir in the tomatoes and cook for a further 5 minutes or until the sweet potato is tender stir in the beans and corn season set aside for 10 minutes to cool slightly
- place 2 tortillas over the base of the prepared dish sprinkle with 1 u20443 cup cheese spread with half of the bean mixture repeat with 2 tortillas 1 u20443 cup cheese and remaining bean mixture top with 2 tortillas and sprinkle with remaining cheese
- bake for 20 minutes or until golden brown and heated through sprinkle with shallot and coriander to serve
