  • 2 cups 500ml rosu00e9 wine
  • 1 2 cup 125ml shiraz red wine
  • 1 2 cup 125ml orange juice
  • 4 whole star anise
  • 3 cinnamon sticks or quills
  • 8 whole cloves
  • 1 3 cup 75g caster sugar
  • 8 yellow peaches stoned thickly sliced
  • 125g blueberries
  • 125g raspberries

  • place combined wine orange juice star anise cinnamon cloves sugar and u00bd cup 125ml water in a heavy based saucepan over low heat cook stirring for 5 mins or until the sugar dissolves increase heat to high and bring to the boil reduce heat to low simmer for 15 mins or until mixture thickens slightly
  • add the peach to the wine mixture in the pan simmer for 5 mins or until tender remove from heat add the blueberries and raspberries and set aside to cool transfer the mixture to a large bowl cover and place in fridge overnight to develop the flavours
  • remove the cinnamon and cloves and discard transfer to a serving dish serve with the sticky date pudding
