Lentil Stew


This simple, vegetarian lentil stew is a hearty dinner recipe for when nights grow colder.

The ingredient of Lentil Stew

  • 2 tbsp olive oil
  • 1 brown onion finely chopped
  • 1 celery stick finely chopped
  • 3 garlic cloves thinly sliced
  • 1 tbsp finely chopped fresh oregano leaves plus extra to serve
  • 1 1 2 cups french style green lentils rinsed drained
  • 1l massel vegetable liquid stock
  • 400g can cherry tomatoes
  • roti bread to serve
  • yoghurt to serve

The Instruction of lentil stew

  • heat oil in a large saucepan over medium heat cook onion celery garlic and oregano stirring for 10 minutes or until softened stir in lentils add massel liquid stock vegetable style and bring to the boil over high heat reduce heat to medium low and simmer covered for 45 minutes stir through tomatoes and simmer covered for another 15 minutes season
  • serve sprinkled with extra oregano roti bread and yoghurt
