These unassuming little cakes hold a lovely surprise in the centre - a gooey apple custard.

- 150g butter at room temperature
- 100g 1 2 cup caster sugar
- 1 tsp vanilla extract or vanilla bean paste
- 2 eggs
- 200g 1 1 3 cups self raising flour
- 80ml 1 3 cup milk at room temperature
- icing sugar to serve
- dollop cream to serve
- 1 1 2 tbs custard powder
- 2 tsp caster sugar
- 185ml u00be cup milk
- 1 2 cup mashed apple slices pie fruit

- to make the custard place custard powder and sugar in a small saucepan stir in 1 2 tbs milk to form a paste stir in remaining milk slowly bring to the boil stirring continuously over a medium heat reduce heat to low and simmer for 2 minutes or until thickened set aside for 1 hour stirring occasionally until cooled completely stir through the apple
- preheat oven to 180c 160c fan forced grease a 12 hole u00bd cup muffin pan
- use electric beaters to beat the butter sugar and vanilla in a bowl until pale and creamy add the eggs 1 at a time beating well after each addition add the flour and milk and beat until well combined
- spoon 1 2 tbs batter into each muffin hole spreading slightly up the side top with 1 tbs custard add another tbs mixture to cover the custard
- bake for 22 25 minutes or until golden set aside for 5 minutes to cool slightly before transferring muffins to a wire rack to cool completely
- dust with icing sugar serve with cream
