- 2 tbsp extra virgin olive oil
- 500g italian style pork sausages casings removed
- 1 brown onion finely chopped
- 4 garlic cloves crushed
- 1 2 tsp dried chilli flakes
- 1 tbsp chopped fresh thyme
- 2 tbsp tomato paste
- 400g can borlotti beans drained rinsed
- 400g can chopped tomatoes
- small fresh basil leaves to serve
- 2 cups milk
- 3 4 cup instant polenta
- 50g butter chopped
- 1 3 cup finely grated parmesan

- heat oil in a large deep frying pan over medium high heat add sausage mince cook breaking up mince with a wooden spoon for 7 to 8 minutes or until browned add onion cook stirring for 5 minutes or until softened add garlic chilli thyme and paste cook stirring for 1 minute or until fragrant
- add beans tomatoes and 1 2 cup water season with pepper bring to the boil reduce heat to low simmer stirring occasionally for 5 minutes or until mixture thickens
- meanwhile make creamy polenta combine milk and 2 cups cold water in a medium saucepan bring to the boil over medium high heat gradually add polenta stirring constantly until combined reduce heat to medium low cook stirring constantly for 2 minutes or until thickened remove from heat stir in butter and parmesan season with salt and pepper
- spoon sausage ragu over polenta serve sprinkled with basil leaves
