  • 2 tbsp extra virgin olive oil
  • 500g italian style pork sausages casings removed
  • 1 brown onion finely chopped
  • 4 garlic cloves crushed
  • 1 2 tsp dried chilli flakes
  • 1 tbsp chopped fresh thyme
  • 2 tbsp tomato paste
  • 400g can borlotti beans drained rinsed
  • 400g can chopped tomatoes
  • small fresh basil leaves to serve
  • 2 cups milk
  • 3 4 cup instant polenta
  • 50g butter chopped
  • 1 3 cup finely grated parmesan

  • heat oil in a large deep frying pan over medium high heat add sausage mince cook breaking up mince with a wooden spoon for 7 to 8 minutes or until browned add onion cook stirring for 5 minutes or until softened add garlic chilli thyme and paste cook stirring for 1 minute or until fragrant
  • add beans tomatoes and 1 2 cup water season with pepper bring to the boil reduce heat to low simmer stirring occasionally for 5 minutes or until mixture thickens
  • meanwhile make creamy polenta combine milk and 2 cups cold water in a medium saucepan bring to the boil over medium high heat gradually add polenta stirring constantly until combined reduce heat to medium low cook stirring constantly for 2 minutes or until thickened remove from heat stir in butter and parmesan season with salt and pepper
  • spoon sausage ragu over polenta serve sprinkled with basil leaves
