The ingredient of Mini Ham And Smashed Pea Frittata
- 80g 1 2 cup frozen peas
- 1 clove garlic crushed
- 50g feta crumbled
- 2 tbsp grated parmesan cheese
- 1 tbsp lemon thyme leaves
- 100g primo english ham
- 3 eggs
- 2 1 2 tbsp milk
The Instruction of mini ham and smashed pea frittata
- preheat oven 180c 160c fan forced grease a 12 hole medium 80ml 1 3 cup capacity muffin tin with non stick cooking spray place peas in a small heatproof bowl cover with boiling water leave for 1 minute then drain and run under cold water
- place peas in a medium bowl mash with a fork or potato masher add garlic feta parmesan and thyme season with pepper and mix well
- place a slice of ham into the base of each muffin hole to make a case divide the pea mixture between the ham cases whisk the eggs and milk in a jug pour evenly into the cases bake for 25 minutes or until golden and set serve
