The ingredient of Sweet Potato And Feta Muffins
- 225g 1 1 2 cups self raising flour
- 1 tsp baking powder
- 90g 1 cup rolled oats
- 1 tbsp brown sugar
- 80ml 1 3 cup olive oil
- 330g 11 4 cups plain yoghurt
- 2 eggs
- 250g sweet potato peeled coarsely grated
- 2 tbsp chopped fresh chives
- 100g persian feta crumbled
- 2 tbsp lsa
- 2 tbsp pepitas
- 20g butter chilled chopped
The Instruction of sweet potato and feta muffins
- preheat oven to 180u00b0c 160u00b0c fan forced line twelve 80ml 1 2 cup muffin pans with paper cases sift the flour into a bowl add the baking powder 75g 3 4 cup oats and 2 teaspoons brown sugar stir to combine
- make a well in the centre add the oil yoghurt eggs sweet potato chives and 60g of the feta stir until just combined divide among the prepared cases
- combine remaining oats sugar and feta in a small bowl add the lsa pepitas and butter and rub with your fingertips until combined divide mixture over muffins bake for 30 35 minutes or until a skewer inserted into the centre of a muffin comes out clean and the muffins are golden serve warm or cold
