Perfect for finger food, these toasted chicken and pistachio sandwiches take some time to create but are worth the wait!
The ingredient of Toasted Chicken And Pistachio Sandwiches
- 1 lemon sliced
- 2 sprigs flat leaf parsley
- 400g small chicken breast fillets trimmed
- 1 3 cup pistachio kernels finely chopped
- 1 stick celery finely chopped
- 1 2 cup whole egg mayonnaise
- 1 loaf turkish bread split lengthways
- olive oil cooking spray
- butter softened for spreading
The Instruction of toasted chicken and pistachio sandwiches
- bring a deep frying pan of water to the boil over medium high heat add lemon parsley and chicken reduce heat to medium low simmer partially covered for 8 to 10 minutes or until chicken is just cooked through transfer chicken to a plate allow to cool slightly cover and refrigerate until cold
- finely chop chicken and place in a bowl add pistachios celery mayonnaise and salt and pepper stir until well combined
- preheat a grill on high heat spray both sides of bread with oil grill each side for 1 to 2 minutes or until lightly toasted spread cut sides with butter
- spread bread base with chicken mixture top with remaining bread trim sides cut loaf into 4cm squares and serve
