  • 6 about 1kg even sized medium coliban washed or sebago potatoes unpeeled
  • 125ml 1 2 cup buttermilk
  • 60g butter cubed
  • 2 garlic cloves crushed
  • salt ground white pepper

  • place potatoes in a large saucepan and cover with cold water bring to the boil over medium high heat boil uncovered for 15 minutes or until tender when pierced with a skewer drain and set aside for 5 minutes to cool slightly
  • peel potatoes and return to pan use a potato masher to mash until smooth add buttermilk butter and garlic and mash until combined pass mash through a sieve gently pushing with the back of a wooden spoon into a clean saucepan stir over low heat for 1 2 minutes or until hot taste and season with salt and pepper
