The ingredient of Asparagus Pea And Spinach Salad
- 2 bunches asparagus woody ends trimmed halved diagonally
- 230g 1 1 2 cups frozen baby peas
- 60ml 1 4 cup fresh lemon juice
- 3 tsp extra virgin olive oil
- 1 tsp dijon mustard
- 1 2 tsp raw sugar
- 1 x 150g pkt baby spinach leaves

- bring a medium saucepan of water to the boil over high heat add the asparagus and peas and cook for 2 3 minutes or until bright green and tender crisp refresh under cold running water drain
