  • 2kg of desiree or pontiac potatoes
  • sea salt
  • 3 tbsp olive oil

  • preheat oven to 220u00b0c peel and cut 2kg of desiree or pontiac potatoes into 4cm pieces place potatoes in a large saucepan and pour over boiling water
  • cook for six minutes over medium heat drain return the potatoes to the pan place a lid on the pan and shake vigorously this roughs up the surface season with sea salt
  • heat three tablespoons olive oil in a baking tray add potatoes to the tray and roast turning occasionally for 40 50 minutes season with salt and serve immediately
