Caramelise pears with port, balsamic and vanilla for this deliciously different salad.
The ingredient of Glazed Pear And Goats Cheese Salad
- 2 tsp olive oil
- 4 slices prosciutto
- 20g butter
- 2 williams pears cored cut into wedges
- 1 tbsp port
- 1 2 tsp vanilla bean paste
- 2 tbsp balsamic vinegar
- 50g baby rocket leaves
- 50g baby spinach leaves
- 2 spring onions shallots thinly sliced
- 100g goats cheese crumbled
- 70g 1 2 cup pecans toasted chopped
- 1 tbsp extra virgin olive oil
The Instruction of glazed pear and goats cheese salad
- heat the olive oil in a non stick frying pan over medium high heat cook prosciutto for 1 2 minutes each side or until golden and crisp transfer to a plate lined with paper towel break into shards
- heat the butter in frying pan over medium low heat cook the pears turning for 6 minutes or until golden combine port vanilla and half the vinegar in a small bowl add to pan and cook turning pears to coat for 2 minutes or until the glaze reduces and thickens remove from heat
- combine rocket spinach and spring onion on a platter top with pears goatu2019s cheese pecan and prosciutto stir extra virgin olive oil and remaining vinegar into the remaining glaze in the pan drizzle over salad
