Sauteed Leek Bacon


Bacon adds salty flavour to this leek side dish.

The ingredient of Sauteed Leek Bacon

  • 50g butter
  • 1 brown onion halved thinly sliced
  • 200g bacon rashers rind and excess fat removed roughly chopped
  • 6 about 1 5kg leeks halved lengthways washed dried cut into 5cm lengths
  • salt freshly ground black pepper

The Instruction of sauteed leek bacon

  • melt the butter in a large deep frying pan over medium heat until foaming add onion and cook stirring for 2 minutes or until onion softens add bacon and cook stirring for 5 minutes or until bacon starts to brown add the leek and cook turning occasionally for 2 minutes or until brown
  • reduce heat to low cut a piece of non stick baking paper large enough to fit over the top of the frying pan gently crumple and wet with cold water place over the leek mixture to cover cook for 35 40 minutes or until leek is soft remove from heat season with salt and pepper serve with beef wellingtons
