  • 400g cup mushrooms sliced
  • 1 4 cup 60ml olive oil
  • 1 3 cup finely chopped flat leaf parsley
  • 2 tbsp rice wine vinegar
  • 1 garlic clove crushed
  • 2 tbsp maple syrup
  • 2 tbsp soy sauce
  • 3 tsp sesame oil
  • 3 tsp finely grated ginger
  • 250g pkt ancient grains microwavable rice
  • 100g baby spinach leaves

  • place the mushroom in a large bowl add the olive oil parsley vinegar and garlic toss to combine season cover and set aside stirring occasionally for 2 hours to develop the flavours
