A quick and easy vegan salad with earthy mixed grains and marinated mushrooms.

- 400g cup mushrooms sliced
- 1 4 cup 60ml olive oil
- 1 3 cup finely chopped flat leaf parsley
- 2 tbsp rice wine vinegar
- 1 garlic clove crushed
- 2 tbsp maple syrup
- 2 tbsp soy sauce
- 3 tsp sesame oil
- 3 tsp finely grated ginger
- 250g pkt ancient grains microwavable rice
- 100g baby spinach leaves

- place the mushroom in a large bowl add the olive oil parsley vinegar and garlic toss to combine season cover and set aside stirring occasionally for 2 hours to develop the flavours
