Carrots make deliciously crunchy French fries especially when seasoned with a generous pinch of sea salt and dried mint.

  • 800g carrots
  • olive oil cooking spray
  • 1 2 tsp dried mint
  • 1 tsp sea salt

  • preheat oven to 200c 180c fan forced lightly grease 2 large baking trays
  • cut carrots in half crossways cut each half into 4mm thick slices cut slices into 4mm thick sticks place carrot in a single layer on prepared trays spray with oil
  • bake for 15 to 20 minutes swapping trays halfway or until golden and tender 4 combine mint and salt in a small bowl season with pepper sprinkle carrots with salt mixture serve
