The ingredient of Christmas Tree Stack Recipe
- 125g butter softened
- 1 2 cup 110g caster sugar
- 1 coles australian free range egg
- 1 1 2 cups 225g plain flour
- 1 tsp vanilla bean paste
- 1 tsp finely grated orange rind
- 1 tsp almond extract
- 100s 1000s to decorate
- 2 coles australian free range egg whites
- 2 tsp lemon juice
- 3 cups 480g pure icing sugar sifted

- use an electric mixer to beat the butter sugar and egg in a large bowl until just combined add flour vanilla orange rind and almond extract beat until the mixture just comes together
- turn dough onto a lightly floured surface gently knead until smooth divide into 2 portions and shape into discs cover with plastic wrap and place in the fridge for 30 mins to chill
- preheat oven to 180u00b0c roll out the dough on a lightly floured surface until 3mm thick use small medium and large star shaped cutters to cut shapes from the dough rerolling excess place on lined baking trays bake for 10 12 mins or until light golden cool on the trays
- meanwhile to make the royal icing whisk the egg whites and lemon juice in a large bowl gradually add the icing sugar stirring after each addition until smooth adding more icing sugar if necessary to make a thick paste
- spread 1 side of the biscuits with royal icing sprinkle with 100u2019s 1000u2019s set aside to set
- stack the biscuits from large to small to make a christmas tree shape
