For a healthy no-fuss dinner, try this colourful one-pan salmon and veggie bake.
The ingredient of One Pan Prosciutto Wrapped Salmon
- 2 tbsp chopped fresh rosemary plus 4 extra sprigs
- 2 garlic cloves sliced
- 2 tbsp extra virgin olive oil
- 700g baby carisma potatoes sliced thickly
- 2 bunches broccolini trimmed
- 200g brussels sprouts halved
- 1 large red onion cut into wedges
- 4 x 200g salmon fillets with skin
- 35g sachet chimichurri finishing drizzle
- 4 slices prosciutto
- 200g vine ripened cherry truss tomatoes
- lemon wedges to serve
The Instruction of one pan prosciutto wrapped salmon
- preheat oven to 220c 200c fan forced line a large baking tray with baking paper
- combine chopped rosemary garlic and oil in a large bowl season with salt and pepper add potato broccolini sprouts and onion toss to coat place on prepared tray
- coat salmon in chimichurri top salmon with extra rosemary wrap 1 prosciutto slice around each salmon fillet place salmon and tomato on top of vegetables on tray bake for 25 to 30 minutes see note or until vegetables are tender and salmon is cooked through serve with lemon wedges
