  • olive oil cooking spray
  • 1 cup caster sugar
  • red food colouring
  • cachous blue and silver to serve

The Instruction of christmas toffee

  • line a large baking tray with baking paper spray cookie cutters well with oil place on prepared tray
  • place sugar and 2 tablespoons cold water in a small saucepan place over low heat stir for 5 minutes or until sugar has dissolved bring to the boil boil without stirring until mixture reaches 150u00b0c on a candy thermometer sugar syrup should only be light golden in colour tint mixture red with food colouring
  • carefully pour toffee into prepared cutters until toffee is 5mm thick set asidefor 30 seconds to cool slightly sprinkle with cachous set aside for 5 to 6 minutes or until cool to touch and almost set carefully remove cutters set aside to cool completely serve
