Spring Veg Bacon Frittatinis


These delicious Spring Veg & Bacon Frittatinis are quick to prepare & perfect for picnics.

The ingredient of Spring Veg Bacon Frittatinis

  • 12 rashers short cut bacon from the deli trimmed
  • 10 free range eggs
  • 1 bunch asparagus 12 spears diced into 1 cm lengths except for spears
  • 1 2 cup frozen peas
  • 2 spring onions finely diced
  • 1 3 cup finely chopped parsley
  • 1 tsp finely chopped thyme
  • 2 tsp chilli flakes optional plus extra for garnish
  • sea salt black pepper to season

The Instruction of spring veg bacon frittatinis

  • preheat fan forced oven to 180c 200c conventional
  • spray or lightly grease a 12 pan muffin or cupcake tray with oil
  • slice bacon in half length ways and line the sides of each individual pan with bacon
  • whisk eggs herbs leave some herbs aside for garnish and chilli if using in large mixing bowl and then place in a pourable jug
  • mix asparagus peas and spring onions in a bowl stir to combine place 1 tablespoon of vegetable mixture into each pan top with egg mixture
  • top with some of the reserved herbs and chilli and place one trimmed asparagus spears on some of each the frittatinis season each with a little sea salt and black pepper
  • place in oven and bake for 15 20 minutes egg should be just set but still soft in the middle remove from oven and allow to stand for 5 minutes before removing take a butter knife and run it around the edge of each pan and carefully remove serve warm or chill
