This warm breakfast couscous porridge is topped with almonds, apricots and pistachios.

The ingredient of Fruit And Nut Breakfast Couscous

  • 1 cup clear apple juice see notes
  • 1 tbsp caster sugar
  • 1 cup wholemeal couscous
  • 1 2 tsp mixed spice
  • 1 3 cup natural sliced almonds toasted
  • 1 3 cup dried apricots thinly sliced
  • 1 3 cup pistachio kernels roughly chopped
  • 2 cups milk warmed to serve optional

  • place juice and sugar in a small saucepan over high heat cook stirring for 2 minutes or until sugar dissolves bring to the boil remove from heat
  • combine couscous and mixed spice in a heatproof bowl add juice mixture cover stand for 5 minutes
  • fluff couscous with a fork to separate grains add almonds apricots and pistachios toss to combine serve with milk if using
