This warm breakfast couscous porridge is topped with almonds, apricots and pistachios.
The ingredient of Fruit And Nut Breakfast Couscous
- 1 cup clear apple juice see notes
- 1 tbsp caster sugar
- 1 cup wholemeal couscous
- 1 2 tsp mixed spice
- 1 3 cup natural sliced almonds toasted
- 1 3 cup dried apricots thinly sliced
- 1 3 cup pistachio kernels roughly chopped
- 2 cups milk warmed to serve optional

- place juice and sugar in a small saucepan over high heat cook stirring for 2 minutes or until sugar dissolves bring to the boil remove from heat
- combine couscous and mixed spice in a heatproof bowl add juice mixture cover stand for 5 minutes
- fluff couscous with a fork to separate grains add almonds apricots and pistachios toss to combine serve with milk if using
