  • 300g packet coles cauliflower vegetableu00a0rice
  • 410g can diced tomatoes with garlic and onion
  • 1 red onion thinly sliced
  • 1 2 cup chopped fresh mintu00a0leaves
  • 1 2 tsp ground sumac
  • 1 2 cup drained canned lentils
  • 100g baby spinach
  • 4 eggs
  • 1 tbsp dukkah
  • 130g 1 2 cup natural yoghurt

  • heat the oil in a large frying pan over medium heat add cauliflower mix cook stirring for 3u00a0minutes add tomatoes half fill empty can with water pour into pan stir to combine then bring to the boil reduce heat to low simmer for 10 minutes
