The ingredient of Curried Vegetable Fritters With Minted Yoghurt
- 1 large carrot peeled grated
- 1 medium red capsicum diced
- 1 medium corn cob kernels removed
- 3 green onions thinly sliced
- 1 cup plain flour
- 1 2 cup milk
- 1 egg
- 2 tbsp korma curry paste
- alfa one rice bran oil cooking spray
- 1 2 cup reduced fat plain yoghurt
- 1 tbsp finely chopped fresh mint leaves

- using your hands squeeze excess moisture from carrot place carrot capsicum corn and onion in a bowl stir to combine
- sift flour into a bowl season with salt and pepper using a fork whisk milk and egg in a jug until combined add to flour stir until smooth add carrot mixture and curry paste stir until well combined
- spray a non stick frying pan with oil heat pan over medium heat using 1 tablespoon of mixture per fritter cook fritters in batches for 2 to 3 minutes each side or until golden and cooked through transfer to a wire rack over a baking tray lined with paper towel
- combine yoghurt and mint in a small bowl season with salt and pepper serve yoghurt mixture with fritters
