  • 1 large carrot peeled grated
  • 1 medium red capsicum diced
  • 1 medium corn cob kernels removed
  • 3 green onions thinly sliced
  • 1 cup plain flour
  • 1 2 cup milk
  • 1 egg
  • 2 tbsp korma curry paste
  • alfa one rice bran oil cooking spray
  • 1 2 cup reduced fat plain yoghurt
  • 1 tbsp finely chopped fresh mint leaves

  • using your hands squeeze excess moisture from carrot place carrot capsicum corn and onion in a bowl stir to combine
  • sift flour into a bowl season with salt and pepper using a fork whisk milk and egg in a jug until combined add to flour stir until smooth add carrot mixture and curry paste stir until well combined
