The ingredient of Marinated Tofu Skewers
- 320g nigari hard tofu cut into 2 5cm cubes
- 2 1 2 tbsp olive oil
- 2 tsp lemon pepper
- 2 1 2 tsp thyme leaves
- 3 zucchini cut into 2cm thick slices
- 200g grape tomatoes
- 12 button mushrooms halved
- 200g mixed salad leaves to serve
- 4 slices crusty bread to serve
The Instruction of marinated tofu skewers
- soak skewers in a shallow dish of cold water for 30 minutes drain
- place tofu oil lemon pepper and thyme into a ceramic bowl stir to combine cover refrigerate for 1 hour if time permits
- thread tofu zucchini see hint tomatoes and mushrooms alternately onto skewers brush skewers with remaining marinade mixture
- preheat a chargrill or barbecue grill on high heat reduce heat to medium cook skewers for 5 to 6 minutes turning occasionally or until vegetables and tofu are lightly charred and just tender
- divide salad between serving plates top with skewers serve with bread
