Marinated Tofu Skewers


The ingredient of Marinated Tofu Skewers

  • 320g nigari hard tofu cut into 2 5cm cubes
  • 2 1 2 tbsp olive oil
  • 2 tsp lemon pepper
  • 2 1 2 tsp thyme leaves
  • 3 zucchini cut into 2cm thick slices
  • 200g grape tomatoes
  • 12 button mushrooms halved
  • 200g mixed salad leaves to serve
  • 4 slices crusty bread to serve

The Instruction of marinated tofu skewers

  • soak skewers in a shallow dish of cold water for 30 minutes drain
  • place tofu oil lemon pepper and thyme into a ceramic bowl stir to combine cover refrigerate for 1 hour if time permits
  • thread tofu zucchini see hint tomatoes and mushrooms alternately onto skewers brush skewers with remaining marinade mixture
  • preheat a chargrill or barbecue grill on high heat reduce heat to medium cook skewers for 5 to 6 minutes turning occasionally or until vegetables and tofu are lightly charred and just tender
  • divide salad between serving plates top with skewers serve with bread
