- 405g 3 cups cooked brown rice
- 300ml unsweetened almond and coconut milk
- 200ml canned reduced fat coconut milk
- 2 tbsp pure maple syrup
- 1 tsp vanilla bean paste
- 1 tsp ground cinnamon
- 4 pink lady apples cored sliced
- 2 tsp gluten free cornflour
- 185ml 3 4 cup unsweetened pomegranate juice
- 2 tbsp pure maple syrup
- 2 tsp fresh lemon juice
- 1 tsp vanilla bean paste

- to make roasted apples preheat the oven to 200c 180c fan forced place the apple in a baking dish place the cornflour and 1 tablespoon pomegranate juice in a small jug stir until smooth add the maple syrup lemon juice vanilla and remaining pomegranate juice stir to combine pour over apples and stir to coat
- cover dish with foil bake for 40 minutes or until the apple is just tender remove the foil and bake for a further 5 10 minutes or until the apple is caramelised and golden
- meanwhile combine the rice almond and coconut milk coconut milk maple syrup vanilla and cinnamon in a saucepan over medium heat bring to the boil then reduce heat to low simmer stirring occasionally for 20 minutes or until thick and creamy
- divide half the rice among 6 serving glasses spoon over a little pomegranate syrup from the apple top with remaining rice arrange apple on top then drizzle over more syrup to serve
